Must-try dishes include their signature Keshi Yen (a delightful stuffed cheese casserole) and a variety of fresh local fish preparations. Aruban Kitchen: Baking Your Own Fluffy Pan Bati (Aruban Cornbread)

No Aruban meal is complete without Pan Bati, a slightly sweet, fluffy cornbread that’s perfect for soaking up sauces, accompanying stews, or simply enjoying with butter. This staple bread is a testament to Aruba’s simple yet satisfying flavors. While it's called cornbread, it has a softer, almost cake-like texture compared to American cornbread.

Simple Pan Bati Recipe (Yields approx. 8-10 pieces)

Ingredients:

  • 1 cup (125g) all-purpose flour

  • 1 cup (120g) fine cornmeal (not coarse)

  • 1/4 cup (50g) granulated sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 cup (240ml) whole milk (or evaporated milk for richer flavor)

  • 1 large egg, lightly beaten

  • 2 tablespoons unsalted butter, melted and cooled

  • Vegetable oil for greasing the pan (or non-stick spray

Instructions:

  1. Preheat Oven & Prepare Pan: Preheat your oven to 375°F (190°C). Lightly grease and flour an 8x8 inch (20x20 cm) baking pan, or a round 9-inch (23 cm) cake pan.

  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt. Make sure there are no lumps.

  3. Combine Wet Ingredients: In a separate medium bowl, whisk together the milk, beaten egg, and melted butter until well combined.

  4. Mix Wet into Dry: Pour the wet ingredients into the dry ingredients. Stir with a spoon or spatula just until barely combined. The batter will be thick and may have a few lumps; do not overmix, as this will result in tough Pan Bati.

  5. Bake: Pour the batter evenly into the prepared baking pan. Spread it gently with a spatula if needed.

  6. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

  7. Cool & Serve: Let the Pan Bati cool in the pan for 5-10 minutes before cutting into squares or wedges. Serve warm with your favorite Aruban stew, soup, or simply with a smear of butter. It’s also delicious on its own as a snack!
