Aruban Kitchen: Sopi di Carni (Beef Soup)

As the Carnival season heats up, you need stamina. Sopi di Carni (Beef Soup) is the ultimate Aruban comfort food and fuel. It’s not just a starter; it’s a full meal loaded with chunks of beef on the bone, corn on the cob, potatoes, pumpkin, and plantains.

Simple Sopi di Carni Recipe

Ingredients:

  • 1.5 lbs (700g) beef shank or soup meat (with bone is essential for flavor!)

  • 8 cups beef broth or water

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 2 potatoes, peeled and chunked

  • 1/2 lb pumpkin (calabaza), peeled and chunked

  • 2 ears of corn, cut into rounds

  • 1 green plantain, peeled and chunked

  • 1 stalk celery, chopped

  • Fresh parsley and cilantro

  • 1 tbsp tomato paste

  • Salt and pepper to taste

Instructions:

  1. Broth Base: In a large soup pot, brown the beef on all sides. Add the water/broth, onion, garlic, and celery. Bring to a boil, then lower heat and simmer covered for 1.5 - 2 hours until the meat is tender. Skim off any foam.

  2. Add Veggies: Add the corn, pumpkin, and potatoes. Simmer for another 20 minutes.

  3. Finish: Add the plantain chunks and tomato paste. Simmer for 10 more minutes until all vegetables are tender but not mushy.

  4. Season: Stir in fresh herbs, salt, and pepper.

  5. Serve: Ladle into big bowls and serve with a slice of Pan Bati or white rice.
